  1. Use 6 lb of turkey parts, I use wings and legs.
  2. Provide 2 of large onions, peeled and halfed.
  3. Take 4 of celery stalks with leaves, cut into 1/2 inch pieces.
  4. Provide 4 of carrots, cut into 1/2 inch pieces.
  5. Prepare 6 of whole garlic cloves.
  6. You need 10 of whole blacke peppercorns or 1/2 teaspoon ground black pepper.
  7. Prepare 1/2 tsp of dryed thyme leaves.
  8. Take 1 tsp of hot sauce, such as Franks,red hot.
  9. Prepare 1 tsp of seasoned rice vinegar.
  10. Provide 8 cup of sodium free chicken broth, or low sodium.
  11. Use of salt and pepper for seasoning turkey.

Instructions to make Turkey Stock:

  1. Spray a large roasting pan with non stick spray. Preheat oven to 450..
  2. Season turkey pieces with salt and pepper. Place in prepared.pan in.a single, layer. Roast uncovered about 30 minutes until browned.
  3. Place turkey in a very large stockpot. Add 2 cups of chicken broth to roasting pan and place on stovetop, heat to scrape up all.brown bits in.pan. Add to turkey in stock pot. Add vegetables to.pot, along with peppercorns, thyme,hot sauce and viegar.
