The ingredients needed to cook Mama's brunch casserole:

  1. Prepare 14 oz of package of breakfast maple sausage links(cut into small bite size pieces).
  2. Prepare 4 cup of any type of bread cubes ( she always just used the regular ole store bought loaves).
  3. Get 8 large of fresh eggs.
  4. Get 2 3/4 cup of milk.
  5. Use 1 1/4 tsp of ground mustard.
  6. Prepare 4 cup of cheese ( we use yellow and white cheddar).
  7. Prepare 1/2 of green pepper, chopped small.
  8. You need 1/2 of onion, chopped small.
  9. Use 4 oz of fresh mushrooms, chopped.
  10. Use 1 of salt n pepper...your preference.

Instructions to make Mama's brunch casserole:

  1. Cut bread into about one inch cubes and set aside..
  2. In a med skillet fry sausage til browned. Drain n set aside..
  3. In another skillet fry onion n pepper til almost done and add mushrooms til everything is browned nicely. ( You can fry these to ur preference, we like ours to not have a crunch at all!!.
  4. Once step two n three are finished combine eggs in a large bowl and beat well, whisk in milk and mustard and stir in bread. Let sit for about 10 min..
  5. Add onion, pepper, and mushrooms to sausage and mix well. Add to your bread mixture once 10 min is up..
  6. Stir in 3 cups of cheese. Poor mixture into a sprayed 9x13 in dish and top with remaining cheese..
  7. Bake at 350°F (F) for about 45 min til nice and golden brown..
  8. Let rest on counter for about 10 min or so. Enjoy!!!.
